I’ve been meaning to post this recipe here for a while now. It comes from my cousin Kelly, who submitted it to the Hummell Girls Cookbook (link goes to a post I made about the cookbook itself).
This dip, a couple of loaves of French bread and a few friends make for a good party.
Feta and Garlic Paté
2 cloves minced garlic
4 minced anchovy fillets (optional – I don’t use ’em)
6 tbsp soft butter
10 oz (300 g) cream cheese
6 oz (175 g) feta cheese
1/4 cup sour cream
1 tbsp chopped fresh chives or green onions
Hot sauce to taste
Pinch freshly ground pepper
Combine ingredients in food processor until very smooth and creamy.
Spread on fresh bread, crackers or bagels. (This is so good on fresh pieces of French bread!)
Also great in sandwiches.
I have to admit, I use these measurements as a guideline. I tend to add (way) more garlic. I would let the cream cheese soften if you can, otherwise it takes forever to blend with the other stuff in the food processor. (I always forget that part!)
